Everyday moments, studying begins and epic vegan pancakes

I’ve been really enjoying capturing everyday moments, which I talked about in my last post. Here are a few recent ones…

Twilight Storm

The sky was wild last night. It was just before sunset and a storm was brewing, so the clouds were bruised warm pink and orange. I took this photo on my phone then sat by the window, processing it, making sure the colours in the picture were exactly how they were in real life.

Soft Steps

Do you ever touch something so soft and wonderful that you immediately want your entire world to be made from that substance? This bathroom mat is totally that for me. When I’m feeling down, I walk on it a bit just cause it feels so lovely. This whole photo is about things that comfort me – the bathroom mat of soothing delight, my snuggly slippers, and literally the best pyjama bottoms in the world. In case you’re wondering, pyjama bottoms should always be at least three sizes too big and a few inches too long. It’s in the rules.

Brutal attack

When I’m at the computer, writing or studying or otherwise engrossed in something, I usually sit with one foot curled under me and the other hanging off the couch or the chair, bouncing and twitching. My cat sees this as an invitation to play and my bouncy foot becomes a cat toy for a while. He’s not quite as vicious as he looks though.

Speaking of studying, the website for the module I’m doing this year opened and I’ve been able to make a start! Technically the module doesn’t begin until 6th October, but I like to work a couple of weeks ahead so if my body decides to crap out on me and I can’t sit up or look at screens for a week or two, it’s not the end of the world. There’s always the option to ask for an extension on an assignment if I need it, but those are limited and I generally hate the feeling of being behind or rushing to catch up. Working a bit ahead helps me keep my chill and I’m all about that these days.

So far, I’ve been reading about theory of mind in children and animals, which has very little to do with crime (I’m doing a forensic psychology degree) but it’s still really interesting. I keep having spontaneous little moments of gratitude when I’m studying. I feel so lucky to have the opportunity to do what I’m doing and I appreciate everything that aligned the way it did to enable me to do this. Up until not that long ago, life was very different and while I don’t let past experiences weigh me down, I do let them serve as a reminder of everything that led up to how things are now and how much strength, resilience and determination it took to get here.

Finally, my friend Ivy uploaded this video to her awesome YouTube channel so I couldn’t resist having a go at making these pancakes. I was not disappointed! I’m allergic to dairy and tend to eat a mostly plant-based diet anyway, so I always get super excited when I find new recipes to try. I didn’t have smoked tofu, so I just sliced extra firm tofu, coated it with smoked paprika (which tastes more like ‘smoked’ than ‘paprika’ anyway) and fried it – it was DELICIOUS 🙂

  1. I was a vegetarian for over a decade (and still cook mostly vegetarian at home) and I have seen so many recipes with smoked tofu lately, both from Australia and the UK — but I’ve never seen smoked tofu in the US. Is it common everywhere but here? I would love to get my hands on some of that.

    My old fake-bacon trick was to slice tempeh very thinly and marinate it in a little oil and liquid smoke, then pan fry it. It was wonderful on a BLT sandwich with really ripe tomatoes.

    And now I’m hungry. 😉

    1. I’ve never looked for smoked tofu so I don’t know if it’s a common thing or not, but I keep seeing it mentioned more and more online, so hopefully it’s not too hard to get hold of. I need to try liquid smoke! I love smokey flavours and I feel like I’ll end up adding it to everything, which will make a change from adding chilli and garlic to everything, which is what I do at the moment.

  2. I love smoked tofu, but never fancy pancakes unless they are sweet! I recently got into making (vegan) US-style pancakes, where they are smaller but deeper, so you can fit more in the pan, and also add things like frozen berries (that wouldn’t work in the traditional UK-style super thin pancake). They are so nice, and I’m amazed at how quick they are to knock up – handy when friends pop round. 🙂

    1. That’s the joy of smoked tofu though – it’s AMAZING with sweet pancakes! I’ve been adding maple syrup and dark chocolate chips, which is totally delicious and dangerously addictive.
